Meet my beautiful daughter, Sarah Mae. Sarah was diagnosed with Celiac disease about 6 years ago before gluten free recipes were to be found. Since then many restaurants offer gluten free foods, and the food you buy in the stores is much better now than it was then.
Sarah and I have found a meatloaf recipe that we all love and no one would ever know it’s gluten free and we would like to share it with you.
You will need:
2 lbs. ground beef; 1 can gluten free tomato soup (we use Dr. McDougalls); 3/4 C oats; 2 eggs; 1/2tsp salt, pepper, Italian seasoning (more-or-less to taste).
GLAZE: ketchup, brown sugar, left over tomato soup.
MIX all ingredients together (put some soup to the side for glaze). Put in meatloaf pan. MIX glaze, spread on top of meatloaf. Cook 375 for about 1.5 hours. When it is completely cooked, (check with meat thermometer), take out of oven and let it sit for about 15 minutes before eating it.
After you make it the first time, tweak it to your liking. My daughter loves the glaze and always wants extra.
It is delicious with a fresh salad and mashed potatoes.
